Procedure

  1. Heat over to 400F and butter a 12-cup muffin pan (including the top)
  2. Whisk together cornmeal, flour, sugar, baking powder, baking soda
  3. In a separate bowl whisk butter, sour cream, milk, eggs, fold into dry ingredients and scoop into muffin pan, sprinkle demerara sugar on top if desired
  4. Bake 18-22 min, to internal temp of 194F. Serve with butter
