Procedure

  1. Heat oil in a large stock pot and sauté garlic and onion 10 minutes
  2. Add salt, red pepper and brown sugar. Stir, add beer and scrape up fond from bottom of pot. Bring to a simmer for 3 minutes
  3. Add stock, vinegar, ham hock and greens. Cover and bring to a boil.
  4. Cover and simmer 2 hours, stirring every 30 minutes, adding more stock as needed.
