Procedure
- Heat oil in a large stock pot and sauté garlic and onion 10 minutes
- Add salt, red pepper and brown sugar. Stir, add beer and scrape up fond from bottom of pot. Bring to a simmer for 3 minutes
- Add stock, vinegar, ham hock and greens. Cover and bring to a boil.
- Cover and simmer 2 hours, stirring every 30 minutes, adding more stock as needed.
